  1. DAY 1: I'm happy to say I got off to a great start this morning. On my way into work I had a healthy cup of green tea and when I arrived at work I ate a bowl of plain cheerios with skim milk and a banana. It makes me feel great to be eating healthy!

  2. Today was actually a good day. It wasn't quite as challenging as I thought it would be. Perhaps because my mind and body has been ready for this "lifestyle change" all along and I've just been fighting it. I am very excited that I ate healthy all day and even got in a small workout at home. However, I definitely intend to pick-up the pace tomorrow and for the remainder of the week. It really is MIND OVER MATTER!

  3. LUNCH today was tuna on wheat bread with lettuce and tomatoes. I was so proud that I did not get chips and a soda to go with the sandwich as I normally would. That was truly a proud moment!

    DINNER today was grilled chicken breast with corn and a small salad. It was homemade and, by far, the best meal of the day. However, I still need to work on eating earlier.

  4. DAY 2: I am still fired up for this 60 Day Challenge. I had a great start to my morning by drinking water and eating Raisin Bran with skim milk for breakfast. I intend to walk for 30-45 minutes today to get in some much needed exercise!
